Understanding Omega-6s And The Conversion Process
For many Americans, plant and seed-derived ALA (soybean, flaxseed, safflower,
sunflower, corn, and so forth) make up an alarming and often hidden source of
fat in the diet. But, as we said, our bodies convert the ALA into Omega-6s, and
beyond that, the next step is creating arachidonic acid that becomes
inflammation.
So, while Omega-6s are good and necessary in moderate amounts, the levels in
our foods had already reached epidemic proportions of these fats long before
food manufacturers began to add more to boast an Omega-3 label or banner.
A Closer Look At This Abundance:
According to Dr. Joseph Hibbeln of the National Institutes of Health, and a
world-renowned Omega-3 researcher:
"When you look at the percentages of Omega-6s to Omega-3s in the US diet, it's
about 90% of all the polyunsaturates in our tissues are Omega 6s and about 10%
are Omega 3s.
So you had a one-to-one balance to inflammation when we were evolving, and now
it's a 10-to-one balance in favor of inflammation because of the predominance
in seed oils. Soybean oil is called the lubricant of the food industry, and it
literally is.
An astonishing 94% of products on grocery store shelves labeled Omega-3 from
breads, eggs, pork to pasta have ALA seed and plant oils liberally added. That
